During summer I always find myself wanting salad. They’re fresh and light and easy to prepare. And best of all: portable, so I can just put it in a container and head to the park to enjoy the sunshine.
And even though I’m aware that a vegan eating salad is about as stereotypical as it can get, a good salad is most definitely not a sad limp thing on the side of the dish. Salads don’t have to be boring, and they don’t have to be an afterthought. A good salad can be a whole filling meal that is both healthy and tasty.
